Zucchini Pasta


One medium zucchini per person. If you have a mandoline slice the zucchini into strips resembling pasta or you can use a knife or other slicing device. Experiment and have fun.

Put the strips into a pot of boiling salted water for about one minute. When cooked remove and drain.

Pour your favorite sauce warmed over the zucchini, such as pesto, Alfredo, tomato sauce or other sauces listed in the Crinella cookbook. Sprinkle the zucchini pasta with Parmesan. Brown for 5 minutes in a preheated 350 degree oven.
