Tuscan Sandwich
Italian sandwiches are most often made with vegetables and are very tasty. The bread must be the best quality, either home made or bought at a very fine bakery. Of course, nowadays, the big supermarkets all have big bakeries that produce freshly baked loves of bread. In most cases the bread will be of inferior quality because the addition of the right amount of flour is not an exact science but depends of the moisture content of the air that day. This is a wonderful sandwich filling on crusty rolls.

4 ounces chopped fine quality black olives
1 1/4 cups chopped roasted peppers
2 tomatoes peeled, seeded and chopped
3 chopped green scallions
2 mashed cloves garlic
3 teaspoons olive oil
2 teaspoons red wine vinegar
1 teaspoon freshly ground pepper
dash of salt
  • Mix ingredients together.
  • Chill.
  • Serve on bread (open face.)

    This is also a nice appetizer with a glass of wine.
