Cherries in White Rum
Here is another preserved fruit that really adds to any dish, sometimes even a main course with game. You can also serve the cherry rum as a light liqueur.

1 pound sour cherries
1/2 cup sugar
white rum
1 vanilla bean
  • Wash cherries, pit cjerries and prick each cherry several times with a needle.
  • Put cherries in a sterilized jar.
  • Sprinkle sugar over.
  • Add vanilla bean.
  • Add rum to top of jar.
  • Cover and shake.
  • Store in a dark place to age for several months.
  • Remove vanilla bean before serving.
  • These perk up many ordinary desserts.
  • Spoon cherries over plain custard, ricotta, pound cake and ice cream.
