hese pancakes are very nourishing yet light.
3 eggs
pinch of salt
1 teaspoon baking powder
1 cup ricotta cheese
1/4 cup milk
1/2 cup flour
olive oil
Separate eggs and whip egg whites.
Mix remaining ingredients and carefully fold in egg whites. Do not overmix.
Cook on very lightly greased or no stick griddle.
Serves 4
