We farm some rice in the Sacramento Valley, so we cook with rice quite often. Surprisingly, rice will make a wonderful salad, much the same as pasta does.
3 cups rice cooked
salt and pepper
1/4 cup parsley chopped
1/4 cup chopped good black olives
1/4 cup roasted peeled diced peppers
1/4/ cup grated carrot
4 scallions chopped
1 cup meat, such as ham, or roast beef
Sonoma County Vinaigrette to taste
