Brunch and Luncheon Dishes

Potato Meld
I first had this dish in a small French cafe near the Italian border. The waiter was amused that I would need a recipe for something so simple. ( Come to think of it, it might have been my college French that he found amusing.) As recipes go, it does not get much easier than this one.

3 cups or so seasoned mashed potatoes (you can use leftovers)
butter
4 eggs
1 cup whipping cream
1/4 pound grated Greuyere cheese
1/4 pound grated Parmesan cheese
pepper
  • Grease an oven proof pan with the butter.
  • Spread the mashed potatoes flat in the dish.
  • Mix together the eggs, cream, and cheese together and pour over the potatoes.
  • Grind a little pepper over the top.
  • Bake in a 300 degree oven for 25 minutes or so until browned.

    Serves 4.

    Enjoy with our 2006 Pinot Noir.
