Sour Dough Pancakes
|
These are the same pancake Grandpa Zurlo used to eat during the long
winter he spent in Alaska while waiting to search for gold. In the
Yukon gold rush, all the miners had sour dough starters to use with
their cooking. The starter also provided the miners with a bonus. They
could pour off the clear, fermented yellow liquid which accumulates on the
top of the starter and drink it. This was called "hooch" and could give
the bored miners a real buzz.
2 cups milk
2 cups all purpose flour
1 egg
2 teaspoons baking powder
1/2 teaspoon salt
1 cup sourdough starter
|
At least ten hours before using, stir together starter, milk and 1 cup
flour.
Let stand out overnight.
When ready to cook, preheat griddle, add remaining ingredients to sour
dough batter.
Let rest one hour.
Pour 1/4 cup for each pancake onto
lightly
oiled griddle.
Cook two minutes on each side.
