Oven Dried Tomatoes
Dried tomatoes are nice to have on hand for a variety of uses. Here is an easy way to dry them.

Tomatoes
Olive oil
Salt and pepper
Fresh herbs
  • Wash, slice tomatoes one inch thick and lay on baking pans which have been sprayed with cooking spray and on which a little olive oil has been spread about.
  • Lay the tomatoes side by side sprinkle with salt and pepper and chopped herbs, such as thyme, oregano, rosemary, or garlic, chopped finely.
  • Bake for 45 minutes to an hour until dry at 200 degrees.

    Alternate Method:
  • Prepare the tomatoes and cover lightly with cheesecloth.
  • Now put the tomatoes up in the rafters of your garage which heats up to about 120 degrees during the summer and leave them until dry.
