Halibut in Marsala Sauce
This is a very easy dish which was given to Nona Zurlo by her friend Mrs. Bianchi, one of the porch regulars on Howard Street. With the skill of a trained interrogator Nona would inquire about the dishes her guest had served recently or would be serving. When a dish held promise Nona would hone in until she had the whole recipe. Like all truly great cooks in those days, she did not like to give out her own recipes.

3 pounds fresh halibut
2 tablespoons light oil such as peanut or walnut
1 1/2 teaspoons salt
1/2 cup Marsala
1/4 cup slivered almonds
2 tablespoons minced parsley
  • Rub a shallow casserole with the oil.
  • Place halibut in dish, drizzle on the rest of the oil.
  • Add the remaining ingredients except parsley.
  • Bake uncovered in a 350 oven 30 minutes or until fish flakes.
  • Baste from time to time.
  • Sprinkle parsley on during last five minutes of cooking.

    Enjoy with our 2005 Sauvignon Blanc.
