Green Rice Torta
Rice Torta is another of those easy Italian dishes that goes to picnics or parties.

1 cup cooked medium grain rice
1 bunch swiss chard, cleaned, cooked,chopped and dried as much as possible
1/2 cup grated parmesan or Sonoma Dry Jack
1/2 cup parsley cleaned and chopped
3 eggs beaten
1 clove garlic pressed
olive oil
salt and pepper to taste
1/4 cup bread crumbs
  • Mix everything together except the oil and crumbs.
  • Oil an 8 inch pan or casserole.
  • Sprinkle pan with bread crumbs.
  • Pour in egg mixture.
  • Bake at 325 degrees fir 40 minutes.
  • Serve hot or cold
