Butter a square pan and dust lightly with flour. Put the cream into
a pan and heat the cream until it rises into a rolling boil. Stir in
the sugar and cook,
stirring until it becomes light brown. This will take a few minutes.
Add walnuts if you are using them. Pour mixture into pan and let cool
for 10 minutes.
Cut caramels with a sharp knife and arrange on a pretty dish
