Caulfield Hill Corn Cakes
The old famrer who lived at the edge of Caulfield Hill grew the best corn in the County. We usually had it simply prepared with butter, but sometimes Nona would make these pancakes to serve with lunch or a light dinner. They are excellent with fresh fish like trout.

1 recipe sour dough pancakes
1 1/4 cups fresh corn kernels
3/4 cup sliced scallions
1/4 cup chopped green bell pepper
2 teaspoons fresh thyme or 1/2 teaspoon dried
1/4 teaspoon fresly ground pepper
  • Mix ingredients with sour dough pancake batter.
  • Heat griddle. When hot lightly oil and pour 1/4 cup batter onto gridle.
  • Cook until brown on both sides.

    Enjoy with our 2005 Sauvignon Blanc.
