Orange or Grapefruit Fritters
These fritters have an unusual, refreshing taste and are very easy to make. They can be served as a dessert but also as an accompaniment to lucheon dishes or grilled chops.

Oranges or grapefruit
Candied orange or grapefruit peel very finely chopped (optional)
2 cups of flour
pinch of salt
2 tablespoons sugar
1/4 cup warm water
1/2 cup beer
1 egg
1 tablespoon oil
1 tablespoon Grand Marnier or Cognac (optional)
oil for frying
Granulated sugar (orange or lemon flavored if you have it.)
Candied orange or grapefruit peel very finely chopped (optional)
  • Mix flour, salt, sugar, water, beer, Grand Marnier or cognac, egg and oil.
  • Beat thoroughly and set aside to 2 or more hours.
  • Cut orange or grapefruit in slices about 1/3 inch wide. Remove rind including all the pith. Lay to dry on paper towels for two hours, changing towels once or twice.
  • Heat about three inches of oil in heavy pot or fryer.
  • Dip slices into batter and fry, turning until brown on all sides.
  • Remove to paper towels on warm platter to drain.
  • Dust with sugar and chopped peel if desired.
