The usual banana cream pie sold in America is a sad mess in which the
taste of uncooked flour prevails. This recipe is one Aunt Marguerite often
made for Francis and it is superb (do not be fooled by the simplicity.)
1/3 cup fresh lemon juice
4 bananas
1/2 cup sugar
1 cup whipping cream
Pour lemon juice into blender.
Add cut up bananas and blend until
smooth.
Add sugar and blend until mixed.
Check taste and add a little
more suagar to your taste if necessary.
Put into a pot on medium heat and
bring to boiling point. Remove from heat.
Pour into a bowl and chill. 2
hours before serving whip cream and fold into banana mixture.
Serve in
cups or glasses or in a pie shell and top with whipped cream.
