Artichoke Frittata

Our mother always had a frittata tucked away in the freezer to be whipped
out when one of her children or grandchildren stopped by unexpectedly.
You can serve a wedge as an appetizer or you can make a meal of it with
salad.
You can substitute other vegetables for the artichokes. If you are on
a diet this is also a wonderful dish to eat.
4 medium length (about 5 inches) link pork sausages, skinned and cut into
smaller (1/2' to 1") pieces
1 small white onion, chopped fine
1 clove garlic, chopped fine
2 packages frozen artichokes
1/2 cup, unseasoned bread crumbs
4 eggs, well-beaten
2 tablespoons, chopped fresh parsley
1/4 cup, grated Parmesan cheese
1 teaspoon, salt
1/2 teaspoon, coarsely ground black pepper
1/4 cup, olive oil

Saute sausage, with onion and garlic, in olive oil, over medium flame.
Add artichokes and cook over low heat until tender, about 10 minutes.
Season to taste with salt and pepper.
Stir in eggs and breadcrumbs.
Spread mixture into an oiled baking dish (about 8 X 12 inches).
Sprinkle
with parsley and cheese and bake at 350 degrees for 30 minutes.
Recipe
serves 6 as a second course, or 12-16 with other antipasti.
