    Winemaking Technique
    Grapes were harvested in the cool morning hours and gently whole-cluster pressed to prevent any phenolic bitterness from skins or stems in the finished wine. The juice was chilled and settled prior to racking. The juice was 100 percent fermented in stainless steel tanks. After fermentation at 55º F, the wine was allowed to remain on its lees for three months prior to racking. The final blend was approximately 50 percent Sauvignon Blanc Clone 01 and 50 percent Sauvignon Blanc Musqué. The wine did not require any further fining, but was polish-filtered prior to bottling.
